This month's Perfect Serve is a Scotch 75 which uses Table Whisky - a delicious dram that The Port of Leith Distillery has created with a nearby distillery while waiting for their single malt whisky to mature.

Scotch 75

The Scotch 75 blends the oak richness of Table Whisky with the bright tang of lemon juice and the smooth sweetness of honey syrup. A touch of fig and jam adds depth, while La Garde Écossaise Champagne brings a crisp and balanced finish. Perfect for celebrating the summer.

Ingredients:

• 25ml Table Whisky
• 25ml lemon juice 
• 25ml honey syrup (just mix honey and hot water) 
• 1 tsp fig jam 
• 75ml La Garde Écossaise 

Method:

• Add all ingredients but the Champagne to your cocktail shaker and shake with ice. 
• Double strain into your flute.
• Add the Champagne.
• Garnish with a twist of lemon.
