Our Malt of the Month is Founders’ Selection Ex-Fino Sherry Butt Cask Single Malt

Since commencing production in November 2014, Annandale Distillery has adopted a ‘wood policy’ that aims to deliver both diversity of flavour along with the opportunity to mature their Single Malts for relatively short or relatively long periods of time, and everything in between.

Fino Sherry is a kind of dry, light-coloured fortified wine from Spain. It is produced from the Palomino grape and matured under a layer of yeast called flor, which prevents it from oxidizing and gives it a nutty, salty taste. Annandale Distillery uses Fino Sherry Butts because when they are used to age whisky, they can transfer some of these features to the spirit, as well as pale colour and freshness. This is the first time the distillery has bottled from Fino Butts, and they are delighted to share the results with you.

Man O’Words 2018 Founders’ Selection Ex-Fino Sherry Butt Cask #397 Single Cask Single Malt

This whisky was aged in cask #397, and it has imparted a rich and complex flavour profile to the spirit.

  • Appearance – Pale Amber
  • Nose - Cooked apples and pears, dried nuts, and sweet spice.
  • Palate – Finely balanced sweet fruits and wafer with notes reminiscent of the Annandale Distillery style.
  • Finish – Nutty hints of hazel and walnut lead into a spicy, tongue coating mouthfeel.
  • 60.4% ABV

Man O’Sword 2018 Founders’ Selection Ex-Fino Sherry Butt Cask #342 Single Cask Single Malt

This whisky comes from Cask #342, which has created a refined and elegant whisky with a distinctive aroma and flavour profile.

  • Appearance - Amber
  • Nose – Intriguing hints of herbal teas, dried fruits and a touch of spice.
  • Palate - Sweet and earthy, with hints of dark molasses, sweet peat, apple and pear.
  • Finish – The finish is long and warm, smoky, with a trace of oak and sherry.
  • 61% ABV
